The space had previously been the workshop for the Cathedral and in particular where the lead was fashioned for the roof hence the name ‘The Plumbery’. The fabric of the restaurant was designed by the Cathedral architect Michael Drury Associates, with Adams + Collingwood advising on the internal facilities. One of the most uplifting characteristics of the restaurant is the clear glass roof through which one gets a fine view of the spire. The furniture and floor were designed using predominantly natural materials to compliment this historic location. The floor is oak plank with the servery furniture to match. The furniture was designed in the Milburn’s way, which is to simulate a domestic side table full of food for your choice avoiding long runs of fast food counters. Guests are encouraged to mingle amongst the counters collecting their choice from the fare available.
